I‘m not sure a router would be any easier or safer, especially cutting the endgrain tongue without a sled and support, seems like asking for splintering and rough edges. The groove is similar, for a few doors you could likely get by without a dado and take multiple passes with a single blade. Since the tongue is a stub tennon you don’t need to get very sophisticated in setup, and can be cut on the flat easily and cleanly with a miter gauge and backer board.
